				<content:encoded><![CDATA[<div class="largerFauxP">This is perfect to make ahead for busy weekdays, and they are high in protein, so they fill you up. Each omelet is loaded with broccoli and cheese, but you can use any combination of vegetables you like (spinach, mushrooms, peppers, onions, etc.)</div>
<h2>Directions</h2>
<p>Preheat oven to 350°. Steam broccoli with a little water for about 6-7 minutes.</p>
<p>When broccoli is cooked, crumble into smaller pieces and add olive oil, salt and pepper. Mix well.</p>
<p>Spray a standard size non-stick cupcake tin with cooking spray and spoon broccoli mixture evenly into 9 tins.</p>

In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. Pour into the greased tins over broccoli until a little more than 3/4 full. Top with grated cheddar and bake in the oven until cooked, about 20 minutes. Serve immediately. Wrap any leftovers in plastic wrap and store in the refrigerator to enjoy during the week.</p>

<h2>Directions</h2>
<p>Heat a large non-stick skillet over medium heat, add the oil then the onion and saute until golden, about 2 to 3 minutes. Add the tomatoes, harissa, salt and pepper and increase the heat to medium-high and simmer until the liquid reduces a bit, about 3 to 4 minutes.</p>

				<content:encoded><![CDATA[<div class="largerFauxP">Get that soft fluffy sweet taste and texture with this faux looking and tasting, low-carb version of French toast.</div>
<h2>Directions</h2>
<p>Preheat oven to 300 degrees F.</p>
<p>Separate 3 of the 4 eggs and add cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you’re using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.</p>
<p>Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool.</p>
<p>Prepare in a bowl 1 egg beaten w/ a bit of cream, vanilla and cinnamon. Coat each mound/disc with egg mixture and fry in butter like french toast.</p>
<p>Serve with butter and Sugar Free Maple Syrup.</p>
